The event at the not-for-profit Lifestyles restaurant at the Hayes Community Campus, part of Uxbridge College is now fully booked. The gourmet evenings are regular events throughout the James Orford, Chef and Section Manager for Catering, sharpens his skills ready for Gourmet Night.
Trainee chefs will be cooking up a gourmet menu on 20 January 2011.
The event at the not-for-profit Lifestyles restaurant at the Hayes Community Campus, part of Uxbridge College is now fully booked. The gourmet evenings are regular events throughout the year and give students the chance to practise their skills while the public can enjoy the results of their work.
The five course menu includes:
- Leek & Brie Pithivier with Cranberry coulis and micro-cress salad
- Velouté of Cauliflower with a brunoise of scallops
- Duck rillettes terrine, pickled vegetables, port syrup
- Braised shin of beef in red wine, sautéed Savoy cabbage, Fondant potato, celeriac purée and crispy shallots
- Apple, prune and butterscotch compote with a cinnamon tuile
James Orford, Head of Catering and Hospitality at Uxbridge College, said: “I can promise you that you won’t be disappointed. You can even bring your own wine for a £3 corkage fee. You won’t get that at ‘The Fat Duck’!”
